The most loved and authentic recipe of Kerala is Fish Curry. It is mostly made using coconut milk to add more texture and taste to the curry. Let's see the most easiest way to make the Kerala style fish curry at home.
Ingredients-
4 Tbsp chilly powder
4 Tbsp Coriender powder
1 Tsp turmeric powder
2 cups of Coconut milk (Use ready Coconut milk powder to save time)
Salt as per taste
7-8 curry leaves
6-7 chopped garlic cloves
3 Green Chillies
5-6 chopped shallots (small onions/chote pyaaz)
Half cup of tamarind juice or 3-4 kokam
1 big size tomato puree
5-6 Fenugreek seeds
Desired Fish
Ingredients To Temper :-
5-6 chopped Garlic
4-5 chopped shallots
7-8 curry leaves
Process :-
1) Mix all the dry species together and add little water to make a paste out of it.
2) Transfer this paste into a clay pot (if not available take a regular kadhai)
3) Add 2 cups of Coconut milk and mix well (You can also use the ready Coconut milk powder to save time)
4) Add 7-8 curry leaves then 3 green chillies
5) Add chopped 5-6 garlic cloves
6) then add 5-6 chopped shallots (chote pyaaz)
7) Add 1 big size tomato puree in it
8) Add half cup of tamarind juice and add salt as per taste.
9) Mix everything well and now keep the clay pot on the gas.
10) Keep the flame on medium and cover the clay pot and let the curry start boiling
11) After 7-8 mins when Curry starts boiling add 5-6 Fenugreek seeds
12) And add desired Fish into it. (I have add Surmai in the fish)
13) Cover it and let fish cook.
14) Meanwhile make the temper, for that heat the sauce Pan
15) Add 5-6 chopped garlic and 4 chopped shallots along with few curry leaves.
16) Mix everything well until nice golden brown and then off the flame
17) Then once the fish is cooked, give the temper to the fish curry gently mix and turn off the flame.
18) The authentic Kerala fish curry is ready.
